Carrot Kugel

Ingredients

  • 2 lbs carrots

  • 6 eggs

  • 1 cup sugar

  • 1 1/4 sticks butter

  • 2 tsp vanilla

  • 6 tbsp flour

  • 2 tsp baking powder

  • Heaving dash cinnamon

  • topping

  • 1/2 C cornflake crumbs

  • 6 tbsp brown sugar

  • 4 tbsp butter

  • 1/2 cup chopped nuts

Directions

  • Peel and boil carrots until soft

  • Put eggs and carrots in a blender (or food processor) until mashed. Add the rest of the ingredients.

  • Pour into 9 x 13 pan.

  • Add topping. If making ahead, do not put topping on until it goes into the oven or it will fall to the bottom.

  • Bake 350℉ until knife comes out clean. About 40 minutes
