Carrot Kugel
Ingredients
2 lbs carrots
6 eggs
1 cup sugar
1 1/4 sticks butter
2 tsp vanilla
6 tbsp flour
2 tsp baking powder
Heaving dash cinnamon
topping
1/2 C cornflake crumbs
6 tbsp brown sugar
4 tbsp butter
1/2 cup chopped nuts
Directions
Peel and boil carrots until soft
Put eggs and carrots in a blender (or food processor) until mashed. Add the rest of the ingredients.
Pour into 9 x 13 pan.
Add topping. If making ahead, do not put topping on until it goes into the oven or it will fall to the bottom.
Bake 350℉ until knife comes out clean. About 40 minutes
