Chocolate Biscotti

Ingredients

  • 4oz bittersweet chocolate, broken into pieces and melted

  • 1 cup sugar

  • 1/2 cup oil

  • 2 eggs

  • 3 Tbsp vanilla sugar (1 tsp vanilla, 3 Tbsp sugar)

  • 1/2 unsweetened cocoa

  • 1 Tbsp potato starch (or flour or tapioca starch)

  • 1 1/2 cups ground almonds (coffee grinder)

  • 1/4 tsp salt

  • 1 Cup chocolate chips–semi-sweet

Directions

  • Preheat oven to 350

  • line cookie sheet with parchment paper

  • Combine the first 5 ingredients

  • Add cocoa

  • Combine 7, 8, & 9

  • Add in chocolate chips

  • Divide dough in half and make into 2 loaves, each 9” X 3”. Bake 30 minutes, let cool 10 minutes

  • Cut loaf crosswise into 3/4 or 1 inch. Place cookies on their side and bake 14 minutes. Check at 10-12 minutes
