Chocolate Biscotti
Ingredients
4oz bittersweet chocolate, broken into pieces and melted
1 cup sugar
1/2 cup oil
2 eggs
3 Tbsp vanilla sugar (1 tsp vanilla, 3 Tbsp sugar)
1/2 unsweetened cocoa
1 Tbsp potato starch (or flour or tapioca starch)
1 1/2 cups ground almonds (coffee grinder)
1/4 tsp salt
1 Cup chocolate chips–semi-sweet
Directions
Preheat oven to 350
line cookie sheet with parchment paper
Combine the first 5 ingredients
Add cocoa
Combine 7, 8, & 9
Add in chocolate chips
Divide dough in half and make into 2 loaves, each 9” X 3”. Bake 30 minutes, let cool 10 minutes
Cut loaf crosswise into 3/4 or 1 inch. Place cookies on their side and bake 14 minutes. Check at 10-12 minutes
