Red bean beef stew

I basically took the recipe from Bob’s red bean soup mix and added onto it. The collard greens tasted great but you can basically add any other hearty green.

Ingredients

  • 1 cup Bob’s red bean soup mix

  • 8 cups water

  • 3 bouillon cubes or 6 small ones

  • 1 lb ground beef

  • 1 lb baby carrots

  • 1 chopped yellow onion

  • 3 cloves garlic

  • 4 tbs collard greens

  • red pepper flakes to taste

Directions

  • brown the beef into pieces

  • sautee the carrots in a large pot (about 3-5 min)

  • add the onions and sautee (about 2 minutes)

  • add the garlic and sautee (about 2 minutes)

  • add the water and bouillon cubes.

  • add the beef and greens

  • Boil and dissolve the bouillon. Add red pepper flakes.

  • Cover and let simmer for 50-60 minutes.
